Happy Monday! Hope everyone’s week is off to a good start. I usually do baking towards the end of the week to have some treats throughout the weekend but when I saw these Pumpkin Ginger Snap Cookies from Mama Pea’s Blog last night I knew I had to start the week off with them. If you like ginger you will love these cookies, my kitchen smelled like the holidays!
Hear are of the ingredients that I used: whole wheat pastry flour, cinnamon, ginger, baking powder, baking soda, sugar, butter, molasses and pumpkin.
Mix the dry ingredients….
….then the wet.
Add the dry to the wet mixture and refrigerate for an hour.
Roll a tablespoon of dough with your hands and then roll into sugar. I didn’t flatten mine as Mama Pea did because I used butter so I knew they would spread somewhat. Bake in a 350 degree oven for 8-10 minutes just until the edges begin to brown.
Let the cookies cool (if you can wait that long) and indulge! You will be happy you did! :D

These cookies look easy and yummy! I made salted cashew cookies this weekend and they were so addictive!
