Dragging Tuesday and Another Workout

I’ve been dragging today. Blame it on the heat and my lack of sleep last night. No reason, just didn’t have  a great sleep, booo!  On the positive side I did manage to get caught up on all my jewelry orders, phew!
Today was my second day on level 2 of 30 Day Shred and I still feel like I wanted to die, it was quite comical to my daughters as they tried to do it alongside with me!  Just happy I did it and got through it!
For breakfast I made some oats on the stove and added nuts, dried fruit, honey, chia seeds and a little peanut butter. Then had an orange later in the morning.

I cut up some juicy watermelon to snack on for the next few days…

Lunch was same as usual, Chobani yogurt with fruit.
Dinner had to be quick, soccer again…thank god for Bertolli  Olive Oil & Garlic and whole wheat angel hair pasta. It wasn’t homemade but it would have to do for this week. Perfect for quick prep and cleanup, though!

Thinking tonight is going to be an ice cream night….
What is your quick go to dinner for busy week nights?

  1. i never even heard of chia seeds till a few days ago, and now i'm seeing them everywhere! must look into i reckon...

hmmm...none of my cooking is really all that complicated. the quickest meal is probably pasta with EVOO, baked mushrooms, and peas. so easy yet so delicious :)

  2. I love chia seeds -- I put them in smoothies or stir into oatmeal.

My quickest meal is eggs and toast. It is delicious and I always have eggs and bread in the house!

  5. I love Chia seeds! to me they add a creamy/pudding like consistency to the oats. When I need a quick dinner I turn to spaghetti and raviolis as well, it's fast, nutritious and filling. You can't go wrong!
