A Bowl of Holiday Cheer

Are you one of those people that finds it very annoying to  have Christmas shoved down your throat before you can even digest your Thanksgiving meal?   That’s me!!!!

Maybe you are one of those people that goes from Halloween to Christmas and skips Thanksgiving all together?!

Guess what?! I live with one of  “those” people…my husband!   Busted!!!

Not only did I catch him stringing up the lights but he was also blaring Christmas music…our poor, poor neighbors!

Don’t get me wrong, I am no Grinch,  I love everything Christmas….just after Thanksgiving!! lol

So in keeping with my husbands holiday cheer I decided to play along and make a festive soup for dinner. This recipe is from Weight Watchers, I followed it loosely, click here for the original recipe. 

Tortellini Tomato Spinach Soup

To a large pot I added about 6 cups of low sodium chicken broth and about 4 cups of water. This is almost double the amount in the original recipe,  I loves lots of broth in my soups.

Then I added a large can of whole tomatoes that I diced up myself. You can buy tomatoes already diced, the fire roasted ones would work well. I just used what I already had on hand.

Next I added some dried oregano and brought the broth mixture to a boil.

Once it comes to a boil add the tortellini, I used frozen. Cook and stir often, once the  tortellini floats to the top, you know it’s done.

Add the whole bag of spinach and cook another 2-3 minutes.

You can add some parmesan cheese but I chose to leave it out since the tortellini is already filled with cheese. This soup is so easy, fast and delicious!

Doesn’t this look like a big bowl of holiday cheer?!

Hopefully this will satisfy hubby’s holiday spirit until AFTER Thanksgiving!

  1. soup looks great. My hubby loves loves loves Christmas music. It's so funny. By the end of the season, though, it's all I can do to even see those CDs lying around ;-)

  3. THis is such a cool recipe, I can't wait to try it. I love me some soup. BTW, I hate christmas before thanksgiving. I'm all about christmas but starting the 3rd friday of November!

  4. I agree that the Christmas music and excitement need to hold off until after Thanksgiving! I like to ease my way into the holidays. Love the red and green soup :)

  6. Awwwww, it's cute that your hubby is all excited for the holidays, lol. I hear yah though, by Christmas we are sick of the lights and the music when it gets shove down our throats SO early!!!

  8. I Love Christmas but I hold back my joy till after Thanksgiving! not long though, after Thanksgiving dinner we put our tree up...seriously : )
