Happy Veterans Day! I would like to send out a great big thank you to all veterans who have sacrificed their lives and families to keep us safe.
Today I didn’t something that I haven’t done it a long time, something that has been long overdue! And I am so happy to say that I am back at it!
I put my sneakers back on and went for a walk and can I tell you I wasn’t the only happy camper, the dogs were thrilled! Unfortunately, I haven’t kept up with my running schedule since the girls have gone back to school and I miss it terribly. I’ve decided to put it on hold until the spring since I really can’t give it 100%. Bummer…but I have re-committed myself to getting in a workout everyday. No excuses!!! lol
After my walk I was greeted with Kailey and her patriotic breakfast!
Now if I can only get my youngest to eat like this, I would be one proud Mom!
This morning I was in the mood for something warm and soothing so I made up a batch of Apple Cider Steel Cut Oats.
I forgot to add the apple cider for this pic, what a dope!
On the stove bring 3 cups of apple cider to a slight boil and add 1 cup steel cut oats, 1 chopped apple and 1 chopped pear.
Add 1/2 tsp of cinnamon
and 1/2 tsp of pure maple syrup
Cover and cook on low for about 15-20 minutes.
Scoop some out
add some walnuts and enjoy!
My house smells like one huge apple pie! Mmmmmm
I can’t wait to re-heat some of this up in the morning, it’s a perfect way to start the day!!
You can actually prepare this the night before and cook it in a crock pot on low, now that’s something to wake up to!

How much steel oats are in this? I didn't see it in the recipe unless I'm a dunce and missed it. They look great!
