Pumpkin Pie Muffins

Geesh! It's been so long since I've posted a blog that I almost forgot my password! :( I can't believe we are already half way through October, not to mention that every store that I have gone in has their Christmas decorations out! What?! Can't we just enjoy Fall for the short time that it is here?!

Tonight is suppose to officially be my husband's last night shift, yay!!! :D Can't wait to have some type of normalcy back in our lives and meals. I have a whole new found respect and amazement for all you single mom's & dad's out there, don't know how you do it day in and day out! You should be rewarded, heavily!!  A personal chef, maid, homework-helper and chauffeur would be some of my choices!!

Anyways,  this morning to start our weekend off I made some Pumpkin Pie Muffins and can you believe I completely forgot to take pictures until they came out of the oven! Ooops! I found the recipe in one of Ellie Kreiger's older cookbooks, "The Food You Crave".  They were easy to make and tasted great, I loved the pumpkins seeds on top! Although next time I think I'll add some nuts or even maybe chocolate chips to add some texture. Click here for her recipe.





Did you know that 1 cup of pumpkin has more potassium than a medium banana and more vitamin A than a cup of carrots?! Let's here it for pumpkin!!! Woooohooo!

Is anyone getting sick of pumpkin yet?! I've gotten off to a late start so I feel like I'm just beginning! Going to go look through the blogs for some yummy recipes, any suggestions?

  2. I could never get sick of pumpkin! I love fall and I'm with you that I get bummed when the stores already start pushing the winter holidays when Halloween hasn't even happened!

  3. I could never get sick of pumpkin, I love it too much!! I made pumpkin roll oatmeal yesterday for breakfast and about a week or two ago I made pumpkin muffins with a brown sugar crumb topping. I love the idea of pumpkin seeds though! Glad to have you back hopefully your hubby will be off nights now!

    and that alfredo pizza looks great. i made a similar one with chicken on it. and i actually used a small amount of bottled alfredo sauce.
