A Homemade Meal...Finally!

I can't believe after not cooking a meal for almost a week, how much I missed it! And I have to say my meal choice was a winner, easy and delicious. Perfect since I wasn't feeling so hot!

Last night I made a recipe that I found on Tina's blog, Carrots N' Cake for Last-Minute Lasagna.I love eating lasagna but hate making it, cooking the long noodles is such a pain and then trying to layer them in a dish evenly is next to impossible, especially for an ocd person like myself! ;) So replacing them with the cheese filled ravioli is genius!!  Another great thing is this recipe has only a few ingredients that get cooked in one dish for easy cleanup!

I didn't take step by step pictures because it was raining and my kitchen was very dark. So all I did was layer some refrigerated cheese ravioli's, a jar of your favorite pasta sauce and some spinach ( I used frozen) along with mozzarella and parmesan cheese. Can't get any easier than that! Cover it and bake in the oven at 375 degrees for 30 minutes and uncover for another 5 minutes.







This will definitely be one of my go-to-quick dinners that I can depend on during a crazy busy week. If I was feeling better I would have added a side salad, just wasn't in the mood! The only think I will change next time is either make my own sauce or add another 28 oz jar, I like it more "saucy" and it was just a touch dry for my liking.

Bummer Alert!!! Hubby is back on nights...booooo!!!! :(

  1. That looks like a great weeknight dinner. I cook up a storm on the weekend, but 30-45 minutes is all I have the energy for during the work week!

  2. I saw this on Tina's blog too and I had to smile because this is a trick that my mom sometimes used when she was making lasagna on weeknights when I was growing up! I love that these tricks can pass on throughout time!

  3. I still need to try that! It looks so good! I'm ready for a good home cooked meal too! Between all the traveling and activities, lately...I am ready to get back into the kitchen!

  4. Looks really good! I like the addition of spinach, it adds a nice color : ) this is perfect for quick suppers. Boo to hubby being back on nights!! I hope your feeling better!

  5. This is an amazing recipe idea that I WILL be using in a bind I'm sure. My mom made something similar when we were growing up but it was more of a bake with giant cheese ravioli and marinara sauce.

  8. I love the idea of using raviolis instead of noodles...SO much easier! This looks like the perfect dish for a cold night. Yum!

  9. Yummy! I'm going to try it! I thawed something out today that I thought was filling for manicotti, but once it thawed it became clear that's not what it was. So now I'm stuffing my shells with a mystery substance. Wish me luck!
