Pizza N' Dessert

Hope everyone's weekend is going well!

Just wanted to share a recipe I came up with for Chicken Alfredo Pizza. I love everything alfredo but I also know that its not the healthiest thing either. So I made a few substitutions when making the sauce and I have to say it's delicious and hopefully a tad bit lighter! So why no put it on a pizza, my second favorite thing! ;)

Alfredo Sauce
1 cup low sodium chicken broth
1 cup light cream
1 tbl cornstarch
1/2 cup parmesan cheese, grated

Bring chicken broth and light cream to a boil and add cornstarch and stir often until it thickens and then add the parmesan cheese.

For the pizza I just added this sauce on top of the crust and topped it with leftover chicken and broccoli. Place it on the grill (indirect heat) on 450 degrees for about 15 minutes. Voila!

Yumo!!!! And it was even better the next day!! I love taking my favorite dishes and turning them into pizza toppings! Now for dessert....

I guess I'll call this my third favorite, apple crisp!! No special recipe here, just some good ol' apples baked with crunchy oats on top! The perfect way to end the day if you ask me!

Tyler Florence from the Food Network was in Boston yesterday signing his new cookbook "Family Meal". I missed him, bad timing on my part! What a bummer!!! :(

'Night!

  1. I love alfredo! I really could eat it everyday but my hips and heart wouldn't like that lol I made a similar alfredo sauce before using evaporated milk, check it out : ) http://www.skinny-ways.com/2009/12/budget-friendly-creamy-garlic-and.html
