I Love Sundays!

For me Sundays are my favorite day of the week. It’s my hubby’s day off therefore there is no blaring alarm to wake any of us up including the dogs! We spend our mornings lounging around, reading the paper with our coffee, getting caught up on things we didn’t get to during the week all while the girls watching cartoons. It’s our one morning to take the dogs out for a nice long walk and just enjoy the sounds and smells of summer and re-energize ourselves for the following week.
I had a late breakfast today after my walk AND day 7 of my workout.  I cooked up some scrambled eggs, turkey bacon, whole wheat toast and fruit. I wasn’t crazy about this turkey bacon, not my favorite. I love Trader Joe’s,  just haven’t had the time to get there. Dislike.

For someone who usually only eats a bowl of cereal or oatmeal, this breakfast was huge for me and kept me satisfied til mid afternoon! Which was when I dipped into the popchips….again. I couldn’t help myself!
For dinner I picked up one of my favorite finds at the grocery store, rotisserie chicken.  There are endless possibilities when it comes to these convenient chickens. Tonight I just had Keith (hubby) take off the skin and cut it up. Along with chicken I put together a warm corn salad with red onions, garlic, cherry tomatoes, avocado and lime juice. It turned out great and was very tasty. I had some lettuce left over from the other day so I just kept it in wedge form, added some turkey bacon bits and drizzled some of Ellie Krieger’s homemade ranch dressing. If you don’t have a favorite ranch dressing, you’ve got to try this one, it’s simple and delicious! Finally to add some green I drizzled some asparagus with a little olive oil, lemon zest and s&p, wrapped it up in foil and threw it on the grill for about 10 minutes, again very easy and quick.

Can’t forget the glass of Pinot Noir to top it off!

And lastly for dessert I made some Lighten up Lemon Bars that I came across from Fitness Magazine. I definitely need to do some tweaking with the crust on this, it was a bit too thin. With that said, they were  very light, flakey  and tasty,  for only 100 calories it hit my sweet tooth spot. :)

It was a great way to end our Sunday!
Getting some early Zzzzz’s tonight, week 2 and level 2 of my 30 Day Shred is on tap for the morning!

  1. I usually get Jennie O Turkey Bacon for BLTs, but we really don't eat much bacon at all!

    I hate how I can't get to Trader Joes enough either. It is my favorite place to shop for food, but it is over 30 mins away.

    Lastly - lemon bars!! I want some. I'm on a huge lemon flavored sweets kick.
