A Burger for Hubby

Hi everyone, hope your week has started off great! Today I feel like all  that cleaning and purging I did last week has finally caught up with me! Ugh!! I have no energy today and this dreary weather we are having doesn’t help much at all!
This is the start of my 3rd week with the 30 Day Shred video, I should be doing level 3 but I’ve decided since I goofed up last week and missed a few days that I will stay at level 2 for another week.
After my workout I had some multigrain cheerios with strawberries and blueberries.  Then I cut up some fresh pineapple and papaya…

For lunch I made a turkey and tomato panini. I mixed up some plain greek yogurt with a tsp of mayo, squirt of lemon, parmesan cheese and basil and spread it on both sides of my whole wheat bread and added some oven roast turkey breast and tomatoes. Delish!!! Had to add some carrots to my plate to keep up with my veggies goal!

For dinner I found a recipe in Food Network Magazine by Cat Cora for Hawaiian Turkey Burgers. I’m not a huge fan of burgers but boy were these huge and completely satisfied my hubby! He said they were excellent, even if they were turkey! I just settled for a tomato sandwich, I enjoyed making these burgers more than I did tasting them. If your a fan of burgers and bbq sauce then you will love these. The pineapple-papaya sauce was the perfect addition to the turkey.

Here’s the recipe:
Pineapple-Papaya Sauce
1/4 cup chopped fresh pineapple
3 tbls. fresh papaya, diced
2/3 cup bbq sauce
1 tbl. low sodium soy sauce
Mix all ingredients in a small pan and bring to a boil. Turn down to a simmer for 10 minutes until thick.
Hawaiian Turkey Burgers
1 lb. ground turkey breast
3 tbls breadcrumbs ( I made my own with whole wheat bread)
2 tbls onion finely chopped ( I used red)
1/4 tsp. cayenne pepper
1 tbl brown sugar
Mix all these ingredients in a bowl and then add 1/3 cup of the sauce. Next, form into 4 patties and brush with 1 tsp of oil and salt and pepper. Grill on medium heat, turning once, about 6 minutes per side. If desired, grill some pineapple slices for 2 minutes.
Place burgers on rolls and spoon on rest of sauce. Top with pineapple slice, tomato, onion and lettuce.
Needed some fries to go along with the burger so I just cut up a russet potato into thin strips, drizzled them with olive oil and s&p. Baked them in the oven at 450 for 20 minutes. Then I sprinkled some shredded parmesan cheese on top and placed them back into the oven till they were golden brown and crispy.
The only thing missing from this plate is a pickle…:(

  2. yes, all the time!! the hubby and i are both mostly-vegetarian, but have very different tastes in vegetables. i'm not one for potatoes, but he LOVES them. so i gotta treat the man :)

  3. HOLY yum...seriously these sound out-of-this-world! my hubby is easy to please, so i usually just make what sounds good to me. hey, if i'm the one cooking then he's OK with whatever! :)

  4. I love all these hubby friendly meals in the blog world today! My hubby and I pretty much eat NOTHING the same anymore...it's sad. He's not open to trying new things, he likes what he likes and he's a chicken, meat, and so on eater. He eats veggies, thank goodness, but he only likes them plain, not complaining, but since I have given up meat, I like to do more interesting things with my dishes...he no likey :(

    Yout turkey burgers look great though! Before I gave it up I'd be ALL over that!
