Bins and Veggies

Where did the weekend go?!  I know, it flew by while I was finishing up my operation cleanup! :(  So happy to be done with my complete cleanup, today I finished the downstairs craft room and bedroom! It’s pretty sad how cleaning and getting rid of useless things makes me happy but it does! There is something about throwing things away that feels like a big weight being lifted off my shoulders. I am an organize freak and proved it today, I now have 8 empty plastic bins. I’ve come to the conclusion that I love things that hold other things, like bins and bags, never realizing how many I had until I emptied them all!!
Breakfast and lunch was the usual, oatmeal and yogurt with fruit. I didn’t stop while cleaning to have a snack so by the time dinner time came around I was STARVING!!!
In keeping with my goal of incorporating more veggies into my life I put together a grilled veggie sandwich. It was delicious and hit the spot!!
I first made some homemade pesto sauce. Then I cut up a red pepper, squash, zucchini and red onion and drizzled them with olive oil and s&p. Then I grilled them on the grill until soft and tender. When I am cooking with inexpensive ingredients that are in season such as the squash and pepper, I don’t mind splurging on another component in the dish. So I picked up a loaf oh ciabatta bread and toasted it lightly on the grill.

To put the sandwich together I spread some pesto on the top and bottom half of the bread and layered the veggies in between. Yum!!! This sandwich is so versatile, you can use your favorite veggies and they would be perfect! I served this with a side of  my first tomato from the garden…finally!!! It was worth the wait!! :)

Getting ready to watch the finale of The Next Food Network Star and  looking forward to working out tomorrow, I have missed 2 days in a row!!!

  1. grilled veggies do make a wonderful sandwich, my girls love them with a little spread of hummus in a wrap!

  4. I was also doing a lot of cleaning and organizing. I've already donated 4 grocery bags worth of clothes and I'm not done yet. I'm attempting to simplify our home and get rid of the things we don't need. It feels good!

  5. Lovely eats! I love those veggies...I had a panini with the same stuff las tnight!!

    I missed NFNS last night, have it on the DVR! Go Tom! my sister in law is friends with hsi wife...and was at their wedding...so we have been rooting for him :-)
