Homemade Samoas

Today is all about a little indulgence, everyone deserves it in moderation!

When I was younger one of my favorite treats were Thin Mint Girl Scout Cookies. I could easily eat a whole sleeve of them in one sitting, those were the days! Today I would have to say my favorite is the Samoas, isn’t it funny how our tastes change as we grow up?!

Well every where I go in blogsville lately, I have been seeing the homemade version of the Samoas. Hello!!! Must give these a try!!!

This particular recipe comes from Brandy at Nutmeg Nanny, her bars looked amazing along with all her other recipes, go check her blog out for the recipe and see for yourself!

Homemade Samoas Bars                makes 30 bars

The crust:

Bake at 350 degrees for 20 minutes or until edges are light golden.

Toast the coconut in a 300 degree oven

The topping:

IMG_2901mels, Melt the caramels, milk and salt in microwave

Combine with cooled coconut

Evenly spread topping over crust

After the topping has had a chance to cool and set I took it out of the pan to make it easier for cutting.

Melt the chocolate!

I cut these a couple of different ways; first into fun cookies!

Now for the fun and messy part, dip bottoms into chocolate and drizzle over the tops.

And the rest into bars!

This recipe does have several steps to it but I can promise you the outcome is well worth it! They taste exactly like the real thing, I absolutely love the chewiness and taste of the toasted coconut. And whats not to love about the addition of chocolate and the cookie crust is perfection!
