Happy Friday! I don’t know about you but I am welcoming the weekend with open arms!
It has been so long since I’ve made a pizza, I miss our Friday Pizza Night. I’ve put them on hold for a bit while I was following the 17 Day Diet but now that I’m at the end of it that it’s time to enjoy some homemade pizza!
This pizza was inspired by Kailey, my 11 yr old daughter. She came home a few weeks ago from a friends house where they had take-out bbq pizza and she absolutely loved it and reminded me of if every other day. Seriously.
If you have kids do any of yours come home after a play date and tell you how delicious the dinner was or even better, that they ate something there that they would NEVER even touch at home? Happens all the time. First it was tacos now its bbq chicken pizza. If I can’t please this child with a simple bbq pizza like the pizza joint around the corner then I might as well through in the towel!
Honey BBQ Chicken Pizza
- 2 organic boneless/skinless chicken breast
- 1/2 tsp. garlic powder
- salt n’ pepper
- 1/2 cup barbecue sauce (your favorite)
- 2 tbls. honey
- shredded mozzarella cheese
- 1 Boboli whole wheat pizza crust
Preheat oven to 400 degrees. Slice chicken into thin strips and sprinkle with salt, pepper and garlic powder. Cook the chicken in skillet until lightly browned and cooked through. Combine BBQ sauce and honey then add to the chicken and stir until evenly coated and just heated through. Spread on top of pizza crust and top with mozzarella cheese. Bake for 20 minutes or until cheese is melted.
Quick and simple…but was it delicious????
